Cherry Clafouti

A clafouti is a very simple French dessert that is as familiar to the French as our pastry-crusted fruit pie is to us. It is usually made with cherries, but it is also good made with other fruit, especially blackberries. When baked, it should be about l-inch thick so that the cherries nest neatly inside it. It’s usually sprinkled generously with confectioners’ sugar and served warm.

Ingredients

  • 1 tsp Unsalted Butter
  • 2 - 3 cups Sweet Cherries, pitted
  • 4 Eggs
  • 6 tbsp Sugar
  • 1 cup Heavy Cream
  • 1/2 cup Milk
  • 3/4 cup All-purpose flour
  • 1/2 tsp
  • Pure almond extract
  • Confectioner's sugar for garnishing top
  • Heavy cream, whipped (optional)

Instructions

  1. Pre-heat oven to 350
  2. Liberally butter the bottom and sides of a 10-inch pie or quiche dish.
  3. Wash, stem and pit the cherries.
  4. Beat eggs with the sugar until thick and mousse-like. Combine the milk and heavy cream. (An equivalent amount of light cream may be substituted for the heavy cream and milk.)
  5. Gradually beat in the flour and the cream.
  6. Beat until batter is smooth and well blended.
  7. Pour batter into buttered dish.
  8. Arrange an even layer of cherries in the batter.
  9. Bake just below the center of a pre-heated moderate oven for 30 minutes or until the top is well browned and puffy.
  10. Set aside to cool slightly.
  11. Sprinkle top generously with confectioners sugar. (Center of clafouti will fall slightly.)
  12. Serve while still warm; if desired, serve with whipped cream.

  • Because the clafouti Is not very sweet, cover with more powdered sugar than you think advisable. Use a shaker, a flour sifter or a fine-mesh strainer to apply the sugar.
