Christmas Eve Stew

Ingredients

  • 2 lbs beef stew meat
  • 4 potatoes, diced
  • 4 carrots, sliced
  • 1 onion
  • 4 stalks celery, chopped
  • 3 tbsp tapioca
  • 1 dash salt
  • 1 dash pepper
  • 2 bay leaves
  • 1/2 tsp sugar
  • 24 ounces V8 Cocktail Juice

Instructions

  1. Cube and trim fat from meat
  2. Place meat and vegetables in a cassarole dish
  3. Season well with salt and pepper
  4. Pour in V8 Cocktail juice
  5. Sprinkle with tapioca
  6. Cover and bake at 250 degree oven for 5 hours or in a crockpot on low for 12 hours
