Ingredients

  • 8 oz shredded coleslaw
  • 1 cup shredded carrots
  • 12 oz pineapple chunks; drained and cut in half
  • 1/3 cup light mayo
  • 1/2 cup nonfat plain yogurt
  • 1 tbsp cider vinegar
  • salt
  • pepper

Instructions

  1. Add the pineapple to the cole slaw and carrots.
  2. In a small bowl stir together the mayo, yogurt and vinegar; pour over the vegetables. Season with salt and pepper and toss.
