Cornish Pasties

  • 2 1/4 cup flour
  • 1 tsp salt
  • 3/4 cup lard
  • 4 tbsp ice water
  • 1/2 lb ground beef
  • 1 1/2 cup potato peeled and diced
  • 1 carrots, diced
  • 3 tbsp onion chopped
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg


  1. Prepare pastry by the usual method. Chill
  2. Combine filling ingredients except egg.
  3. Roll out half of dough. Using a saucer as a guide, cut out 3 circles. Divide half of filling amongst the 3 circles. Fold over as for turnovers.
  4. Prick pastry or cut out small circle from top of each and seal edges.
  5. Repeat for remaining dough and filling.
  6. Place on baking sheet. Brush with egg (beaten).
  7. Bake in very hot oven (450 degrees) for 20 minutes. Reduce temperature to 375 degrees for another 20 minutes.
