Jen's Oatmeal Cookies

Ingredients

  • 1 cup shortening
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/2 cup rolled oats
  • 1 cup flour
  • 1/2 cup golden flaxseed meal
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup water
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 375°.
  2. Cream shortening and sugar. Add eggs and blend till light and fluffy. Add oats and vanilla.
  3. Sift all dry ingredients (including flax meal) and slowly add to creamed sugar, alternating with water.
  4. Stir in a handful of roughly chopped pecans and a handful of milk chocolate chips.
  5. Bake for 10 minutes or until edges are golden brown.
