Jen's Oatmeal Cookies

Ingredients
- 1 cup shortening
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 cup rolled oats
- 1 cup flour
- 1/2 cup golden flaxseed meal
- 1/2 cup coconut flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup water
- 1 tsp vanilla
Instructions
- Preheat oven to 375°.
- Cream shortening and sugar. Add eggs and blend till light and fluffy. Add oats and vanilla.
- Sift all dry ingredients (including flax meal) and slowly add to creamed sugar, alternating with water.
- Stir in a handful of roughly chopped pecans and a handful of milk chocolate chips.
- Bake for 10 minutes or until edges are golden brown.
