Lemon Meringue Pie

Ingredients
Filling
- 3 tbsp cornstarch
- 1 cup sugar
- 6 tbsp sugar
- 1 lemon peel, freshly grated
- 4 tbsp lemon juice
- 1 tbsp butter
- 3 egg yolks
- 1 1/2 cup boiling water
Meringue
- 4 egg whites
- 1 dash cream of tartar
Instructions
Pre-heat oven to 350
Filling:
- In a double boiler add and mix:
- 2 Tbsp cornstarch
- 1 cup + 2 Tbsp sugar
- Rind of 1 lemon
- 4 Tbsp lemon juice
- 1 Tbsp butter
- 3 egg yolks beaten
- Slowly add 1 1/2 cup boiling water
- Cook until thick
- Pour into cooked pastry shell & allow to cool
Meringue:
- Beat 4 egg whites until almost stiff
- Add 4 Tbsp sugar
- Add 1 dash cream of tartar
- Beat until stiff
- Bake in a 350 degree oven for 15 minutes
