Lemon Meringue Pie

Ingredients

Filling

  • 3 tbsp cornstarch
  • 1 cup sugar
  • 6 tbsp sugar
  • 1 lemon peel, freshly grated
  • 4 tbsp lemon juice
  • 1 tbsp butter
  • 3 egg yolks
  • 1 1/2 cup boiling water

Meringue

  • 4 egg whites
  • 1 dash cream of tartar

Instructions

Pre-heat oven to 350


Filling:

  1. In a double boiler add and mix:
  2. 2 Tbsp cornstarch
  3. 1 cup + 2 Tbsp sugar
  4. Rind of 1 lemon
  5. 4 Tbsp lemon juice
  6. 1 Tbsp butter
  7. 3 egg yolks beaten
  8. Slowly add 1 1/2 cup boiling water
  9. Cook until thick
  10. Pour into cooked pastry shell & allow to cool

Meringue:

  1. Beat 4 egg whites until almost stiff
  2. Add 4 Tbsp sugar
  3. Add 1 dash cream of tartar
  4. Beat until stiff
  5. Bake in a 350 degree oven for 15 minutes
