Linda's Granola

Ingredients

  • 3 cups rolled oats
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1 cup nuts, chopped
  • 1 cup coconut, unsweetened
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup safflower oil
  • 1/4 cup honey

Instructions

  1. Mix dry ingredients (except nuts and coconut) together
  2. Add oil and sweetener (honey or maple syrup) and mix well.
  3. Spread on a rimmed baking sheet and bake at 275 degrees for 45 minutes, stirring every 20 minutes.
  4. Remove from oven and cool.
  5. At this point you could add raisins, dried cranberries or other dried fruit or they could be added when serving.

  • Substitute sunflower, canola or other vegetable oil for safflower oil
  • Substitute maple syrup for honey
