Ingredients
- 1 lb penne rigate, cooked al dente
- 6 tbls butter
- 4 tbls flour
- 2 tsp salt
- 1/2 tsp pepper
- 4 cups milk
- 1 cup onion, grated
- 1 tbsp mustard
- 1 tsp Worcestershire sauce
- 8 oz American cheese
- 8 oz Extra sharp cheddar
- 1/4 cup grated cheddar
Instructions
- Melt 6 tablespoons butter in a sauce pan
- Whisk in 4 tablespoons flour, 2 teaspoons salt, 1/2 teaspoons pepper. Blend well.
- Remove from heat. Gradually add 4 cups milk.
- Return to heat. Cook, stirring constantly until thick and smooth.
- Stir in grated onion (not chopped), mustard, and Worcestershire sauce to taste.
- Stir in all but 1/4 cup cheese until melted.
- Place in a large, greased casserole pan. Put the noodles in and dump the sauce over it, mix it all up.
- Bake covered for about 30 minutes or less. Uncover and bake until golden on top and bubbling on edges.
- Melt some butter in a bowl, add bread crumbs and mix well with a fork. Sprinkle over the top, then on top of that sprinkle some grated cheese over that.
Notes
- I use fake/vegetarian Worcestershire sauce
- Cubed or grated cheese doesn't matter but save approximately 1/4 cup grated cheddar for the topping. You may also use Colby, Mexican grated cheese blend, Monterey Jack, Cheddar, or Asadero. I go by how smooth it is and test taste it.

- I use Panko bread crumbs but I've heard that Pepperidge Farm Goldfish Cracker Crumbs are tasty, too.
