Oatmeal Raisin Cookies

Ingredients

  • 1/2 cup shortening
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt (optional)
  • 1 cup raisins
  • 3 cups oatmeal
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Heat oven to 350°
  2. In a large bowl, beat shortening and sugars on medium until creamy.
  3. Add vanilla and eggs; beat well.
  4. Add sifted flour, baking soda, salt and cinnamon; mix thoroughly.
  5. Fold oats and raisins into mixture; mix well;
  6. Roll tablespoons of dough into balls and place onto ungreased baking sheets. Flatten if desired.
  7. Bake at 350 degrees for 8 to 10 minutes or until light golden brown.
  8. Cool 1 minute on baking sheets before removing to wire rack. Cool completely.

For Bar Cookies

  1. Bake mixture 30 - 35 minutes in ungreased 13x9-inch metal baking pan.
