Ingredients

  • 1/2 cup cornmeal
  • 1 cup all purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp butter, melted

Instructions

  1. in a large bowl, sift together the flours, baking powder, salt and sugar.
  2. Make a well in the center and pour in the milk, egg and butter.
  3. Mix until smooth.
  4. Heat a lightly oiled griddle or frying pan over medium high heat.
  5. Pour or scoop the batter onto the griddle, using 1/4 to 1/2 cup for each pancake.
  6. Brown on both sides and serve hot.

Notes

Array

For an added treat, add blueberries or other fruit to each pancake immediately after pouring the batter onto the griddle.

Originally from AllRecipes.com - Good Old Fashioned Pancakes but I modified by replacing 1/2 cup flour with cornmeal to give a more flavorful, different textured pancake.
