Peppers and Sausage Skillet Dinner

  • 2 tsp olive oil
  • 1/2 lb poultry Italian sausage (approx. 2 links)
  • 2 red potatoes, cut into 3/4-inch cubes
  • 3/4 cup chicken broth
  • 1 large onion, cut into 3/4-inch cubes
  • 2 large bell peppers, cut into 3/4-inch cubes
  • salt
  • pepper


  1. Heat oil on medium in a non-stick skillet
  2. Remove sausage from casing and cook, breaking up with a fork, until no longer pink, about 5 minutes.
  3. Add potatoes to skillet; pour in broth and simmer covered, 8 - 10 minutes or until potatoes are tender.
  4. Add onions and peppers; stir-fry on high for 2 minutes or until vegetables are crisp-tender. Season to taste.
