Potato Pancakes ala Keip

This recipe was shared with me by my uncle Fred (Fritz) Keip who got it from his father, my grandfather, Fred Frank Christopher Keip. In my opinion, they're the best potato pancakes ever, bar none!

Total Time 40 minutes

Ingredients

  • 1 lb red potatoes
  • 1 medium yellow onion
  • 1 egg
  • 2 tbsp flour
  • 1 tsp salt
  • 1/4 cup water

Instructions

  1. Blend, grind, or food process to a course consistency
  2. Preheat a frying pan (Dad preferred a cast iron pan which I find really works best) in which you have poured as much cooking oil (I like canola or olive oil) as conscience will allow (I recommend being generous). Dad would sometimes add a little butter as well.
  3. Pour a manageable amount of batter for each pancake into the preheated pan (in a large pan, usually four)
  4. If the lace edge doesn't satisfy you, add a little more water to the batter.
  5. About when the lacey edges turn light brown, it's time to turn time.
  6. ... and don't forget to eat them.

  • You may want to experiment with the amount of salt and water.
  • Start with 1/4 cup water but you may want to add more after you see how the first panful is fried.
