Reduced Fat Potato Salad

Ingredients

  • 8 large all-purpose white potatoes
  • 1 medium onion, finely chopped
  • 1 cup sliced celery
  • 1 cup nonfat sour cream or yogurt
  • 1 cup light mayonnaise
  • 1 tsp horseradish, or more to taste
  • salt
  • pepper

Instructions

  1. Cook potatoes according to instructions below.
  2. Cool, peel and cut into bite-size pieces.
  3. Combine potatoes with celery and onion; season with salt and pepper.
  4. In a small bowl, mix together sour cream or yogurt, mayo and horseradish; stir into potatoes.
