Reduced Fat Potato Salad
Ingredients
- 8 large all-purpose white potatoes
- 1 medium onion, finely chopped
- 1 cup sliced celery
- 1 cup nonfat sour cream or yogurt
- 1 cup light mayonnaise
- 1 tsp horseradish, or more to taste
- salt
- pepper
Instructions
- Cook potatoes according to instructions below.
- Cool, peel and cut into bite-size pieces.
- Combine potatoes with celery and onion; season with salt and pepper.
- In a small bowl, mix together sour cream or yogurt, mayo and horseradish; stir into potatoes.
