Seafood Newburg

Ingredients
- 2 tbsp margarine or butter
- 2 tbsp all-purpose flour
- 1/4 tsp salt
- 1 dash ground red pepper
- 1 1/2 cup light cream or milk
- 2 egg yolks lightly beaten
- 10 ounces lobster cooked, drained, broken into large pieces
- 3 tbsp Madeira or dry sherry
- 4 patty shells, baked
- paprika
- parsley
Instructions
- In a saucepan melt margarine or butter.
- Stir in flour, salt, and red pepper.
- Add cream all at once.
- Cook and stir until thick and bubbly, then cook and stir 1 minute more.
- Stir about half of the hot mixture into egg yolks; return all to saucepan.
- Cook and stir until mixture just bubbles. Reduce heat.
- Cook and stir 2 minutes more.
- Stir in lobster and Madeira; heat thoroughly.
- Spoon into baked patty shells. Sprinkle with paprika. Garnish with parsley sprigs, if desired.
Notes
- Crab Newburg: Prepare as above, except substitute 14 ounces crab meat, drained, flaked and cartilage removed, for the lobster.
