Seafood Newburg

Ingredients

  • 2 tbsp margarine or butter
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt
  • 1 dash ground red pepper
  • 1 1/2 cup light cream or milk
  • 2 egg yolks lightly beaten
  • 10 ounces lobster cooked, drained, broken into large pieces
  • 3 tbsp Madeira or dry sherry
  • 4 patty shells, baked
  • paprika
  • parsley

Instructions

  1. In a saucepan melt margarine or butter.
  2. Stir in flour, salt, and red pepper.
  3. Add cream all at once.
  4. Cook and stir until thick and bubbly, then cook and stir 1 minute more.
  5. Stir about half of the hot mixture into egg yolks; return all to saucepan.
  6. Cook and stir until mixture just bubbles. Reduce heat.
  7. Cook and stir 2 minutes more.
  8. Stir in lobster and Madeira; heat thoroughly.
  9. Spoon into baked patty shells. Sprinkle with paprika. Garnish with parsley sprigs, if desired.

  • Crab Newburg: Prepare as above, except substitute 14 ounces crab meat, drained, flaked and cartilage removed, for the lobster.
  • Shrimp Newburg: Prepare as above, except substitute 8 ounces frozen peeled, cooked shrimp (1 1/4 cup), thawed, for the lobster.
