Stuffed Peppers w/ Couscous
Ingredients
- 4 Bell peppers, halved lengthwise
- 1 cup couscous (garlic) cooked
- 1 1/2 lb broccoli
- 1 cup feta cheese
- 1/2 cup olives
- 2 tbsp olive oil
Instructions
- Pre-heat oven to 450 degrees
- Microwave peppers on high for 4-5 minutes
- Cook couscous according to package directions
- Cook broccoli until tender
- Mix couscous with feta cheese, broccoli and olives
- Fill peppers with couscous mixture
- Drizzle with oil
- Bake at 450 degrees F for 10 - 15 minutes, uncovered
