Stuffed Peppers w/ Couscous


  • 4 Bell peppers, halved lengthwise
  • 1 cup couscous (garlic) cooked
  • 1 1/2 lb broccoli
  • 1 cup feta cheese
  • 1/2 cup olives
  • 2 tbsp olive oil


  1. Pre-heat oven to 450 degrees
  2. Microwave peppers on high for 4-5 minutes
  3. Cook couscous according to package directions
  4. Cook broccoli until tender
  5. Mix couscous with feta cheese, broccoli and olives
  6. Fill peppers with couscous mixture
  7. Drizzle with oil
  8. Bake at 450 degrees F for 10 - 15 minutes, uncovered
