Sweet Potato Biscuits

Ingredients
- 1 cup sweet potatoes, boiled and mashed
- 6 tbsp butter, melted
- 1/4 tbsp salt
- 1 tbsp sugar
- 2 1/4 cups Flour, self-rising, low-gluten, such as White Lily
Instructions
- Preheat the oven to 500 degrees.
- In a bowl, combine the sweet potatoes, milk, butter, salt and sugar, mixing well.
- Stir the flour into the sweet potato mixture until just combined. This will be a very soft, moist dough.
- Turn the dough out onto a floured surface, and, with floured hands, knead a couple of times.
- Pat the dough out to a thickness of about a half-inch, and cut biscuits with a floured cutter.
- Place the biscuits a half-inch apart on an ungreased bakng sheet, and bake until lightly browned, about 10 minutes.
