Sweet Potato Biscuits

Ingredients

  • 1 cup sweet potatoes, boiled and mashed
  • 6 tbsp butter, melted
  • 1/4 tbsp salt
  • 1 tbsp sugar
  • 2 1/4 cups Flour, self-rising, low-gluten, such as White Lily

Instructions

  1. Preheat the oven to 500 degrees.
  2. In a bowl, combine the sweet potatoes, milk, butter, salt and sugar, mixing well.
  3. Stir the flour into the sweet potato mixture until just combined. This will be a very soft, moist dough.
  4. Turn the dough out onto a floured surface, and, with floured hands, knead a couple of times.
  5. Pat the dough out to a thickness of about a half-inch, and cut biscuits with a floured cutter.
  6. Place the biscuits a half-inch apart on an ungreased bakng sheet, and bake until lightly browned, about 10 minutes.
