Vegetarian Goulash

Ingredients

  • 2 tbsp Olive oil
  • 1 small onion, diced
  • 1 green pepper, chopped
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups Wegmans Don't Have A Cow Meatless Beef Style Crumbles
  • 1 can Beans
  • 1/2 box elbow macaroni, uncooked
  • 3 tbsp red wine vinegar
  • 2 tbsp molasses

Instructions

  1. Cook pasta
  2. Sauté onion, green pepper and beef substitute (or ground beef) in olive oil
  3. Add diced tomatoes and tomato sauce
  4. Optionally add 1 cup diced fresh tomato and/or beans
  5. Add cooked pasta to pan
  6. Add red wine vinegar and molasses
  7. Simmer for 10 minutes
