Watermelon & Tomato Salad

Ingredients

  • 1 cup Watermelon cubes, seedless
  • 3 Tomatoes, multicolored, seedless and cut into chunks
  • 1 English Cucumber, small, cut into chunks
  • 1/4 cup Red onion, pickled & sliced
  • 1/2 tbsp Fresh mint, chopped
  • 1/2 tbsp Fresh basil chopped
  • 3 tbsp Extra-virgin olive oil
  • 2 tbsp Fresh lemon juice
  • 1 tsp Kosher salt
  • 1/2 tsp Black pepper

Instructions

  1. Toss together watermelon, tomatoes, cucumber, onions, mint and basil in a bowl.
  2. In a separate bowl, whisk together oil, lemon juice, salt and pepper
  3. Pour oil mixture over watermelon mixture, and toss to coat.
  4. Taste and adjust seasonings, if desired.
