White Chicken Chili

Ingredients
- 1 tbsp olive oil
- 1 cup white onion, chopped
- 3 cups chicken broth
- 1 tbsp chicken bouillon granules
- 3 cans (15 oz) great northern beans, drained & rinsed
- 1 can (15 oz) Butter Beans
- 1 can (8 oz) Chopped Green Chili Peppers
- 2 tsp ground cumin
- 2 tsp dried oregano, crumbled
- 1 tbsp garlic powder
- 2 chicken breasts (boiled and cubed)
- 2 tbsp corn starch
- Crushed red pepper (Optional)
Instructions
- Saute onions in oil
- Combine Chicken broth, buillion, beans, chili peppers, spices and chicken. Bring to a boil and simmer 2 hours (or more) - until beans start to disintegrate.
- Use Cornstarch (mix w/water) to thicken if desired/necessary.
