White Chicken Chili

Ingredients

  • 1 tbsp olive oil
  • 1 cup white onion, chopped
  • 3 cups chicken broth
  • 1 tbsp chicken bouillon granules
  • 3 cans (15 oz) great northern beans, drained & rinsed
  • 1 can (15 oz) Butter Beans
  • 1 can (8 oz) Chopped Green Chili Peppers
  • 2 tsp ground cumin
  • 2 tsp dried oregano, crumbled
  • 1 tbsp garlic powder
  • 2 chicken breasts (boiled and cubed)
  • 2 tbsp corn starch
  • Crushed red pepper (Optional)

Instructions

  1. Saute onions in oil
  2. Combine Chicken broth, buillion, beans, chili peppers, spices and chicken. Bring to a boil and simmer 2 hours (or more) - until beans start to disintegrate.
  3. Use Cornstarch (mix w/water) to thicken if desired/necessary.
