Chicken Livers

These are a favorite of my dear niece, Linda. They do seem to spatter a lot, so beware. Don't get burned!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 lb or more chicken livers
  • 8 - 10 slices of bacon
  • 1 cup flour
  • garlic powder to taste
  • fresh parsley

Instructions

  1. Wash livers and pat dry. Cut large livers in two.
  2. Place flour with salt and pepper into a plastic bag.
  3. Add livers and shake well.
  4. Cook bacon until crispy.
  5. Remove bacon but leave the drippings.
  6. Add livers to pan and saut6 3 - 4 minutes until they're done. Don't crowd them - it's better to make 2 batches.
  7. Be sure there is enough bacon fat to saute them.
  8. Remove livers carefully to a casserole.
  9. Sprinkle garlic powder to taste, crumble bacon over the top, and add finely chopped parsley.
  10. Serve with toothpicks.
  11. Serve with toothpicks.
