Popovers
There are so many ways to make pop-overs, but this seems to work best for me. There's nothing better with homemade soup than a couple of hot pop-overs!
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Ingredients
- 2 eggs
- 1 cup milk
- 1 tbsp melted butter
- 1 cup flour
- salt
Instructions
- Mix all ingredients thoroughly, without overbeating. In other words, A few lumps are just fine.
- Half fiII buttered muffin tins or a popover pan. Custard cups work equally well.
- Put them in a COLD oven and turn oven to 450 degrees.
- Bake for 15 minutes, reduce heat to 350 degrees, and bake for 15 - 20 minutes.

Test by removing one from pan. It should be crisp outside and tender inside.
