Salmon Croquettes

Mom used to make these regularly and, of course, I wouldn't touch them with a ten-foot pole! I have since grown up. Betsy makes these regularly too, and they are wonderful!

Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 can can red salmon (not pink - Mother called it cat food!)
  • 1/2 cup thick cream sauce (you know, butter, flour and milk slowly stirred until thickened)
  • bread crumbs
  • 1 egg, beaten
  • milk

Instructions

  1. Break salmon into small chunks.
  2. Add cream sauce gradually.
  3. Add a few bread crumbs gradually so you can form salmon into patties.
  4. Roll in bread crumbs,egg, then milk, then back into bread crumbs.
  5. Let them rest on the counter for 1/2 hour. It firms them up I think.
  6. Fry them slowly in a small amount of cooking oil. Turn once.

Mom used to make a cream sauce with peas to serve over the top. Of course, a nice gob of ketchup is absolutely necessary!
