Salmon Croquettes
Mom used to make these regularly and, of course, I wouldn't touch them with a ten-foot pole! I have since grown up. Betsy makes these regularly too, and they are wonderful!

Ingredients
- 1 can can red salmon (not pink - Mother called it cat food!)
- 1/2 cup thick cream sauce (you know, butter, flour and milk slowly stirred until thickened)
- bread crumbs
- 1 egg, beaten
- milk
Instructions
- Break salmon into small chunks.
- Add cream sauce gradually.
- Add a few bread crumbs gradually so you can form salmon into patties.
- Roll in bread crumbs,egg, then milk, then back into bread crumbs.
- Let them rest on the counter for 1/2 hour. It firms them up I think.
- Fry them slowly in a small amount of cooking oil. Turn once.

Mom used to make a cream sauce with peas to serve over the top. Of course, a nice gob of ketchup is absolutely necessary!
